Ingredients
- 🍴4 potato
- 🍴2 tomato
- 🍴1/2 teaspoon Kashmiri red chili
- 🍴6 curry leaves
- 🍴1/2 teaspoon powdered turmeric
- 🍴1 red chili
- 🍴1 1/2 tablespoon vegetable oil
- 🍴1/2 medium capsicum (green pepper)
- 🍴1 onion
- 🍴1/2 teaspoon cumin seeds
- 🍴200 ml coconut milk
- 🍴1 teaspoon coriander powder
- 🍴1/2 teaspoon garam masala powder
- 🍴1/2 cup water
- 🍴salt as required
Instructions
- 🍴To make this main dish recipe, peel the potatoes and wash them under running water. Drain the water and on a chopping board, cut the potatoes into chunk, finely chop the onion and slice the capsicum and tomatoes. Now, put a pan over medium flame and add oil in it. Once the oil is hot enough, add mustard seeds, dried red chilli and curry leaves into it. Once the mustard seeds start to crackle, add chopped onions to it and saute for 8-10 minutes, till they turn golden-brown. Then, add the sliced tomatoes and saute for 2-3 minutes.
- 🍴Now, add garam masala, turmeric powder, coriander powder and salt and mix well. Saute till the tomatoes are soft and tender and the masala is cooked properly. Next, add the potatoes and mix well to coat with the masala. Add the coconut milk and 1/2 cup of water and bring the curry to a boil. Once done, cover the pan with a lid and cook for 20-25 minutes, till the potatoes are cooked properly.
- 🍴Now, take a ladle and add 1 tsp oil in it. When the oil is hot, add curry leaves and red chilli in it. Once the curry leaves are crisp, pour this onto the curry. Serve hot with rice or roti to enjoy!
